Novotel Teams up With WWF to Launch Climate Conscious Menu Worldwide

Guests at the 600 hotels worldwide that belong to the Novotel chain will now have access to a menu specifically designed to be climate-conscious. 


At the centre of the plan is a ambition to ensure that every Novotel hotel will feature menus with at least 25% plant-based dishes by 2026. The Sustainable Times reports that the chain, which is owned by the Accor Group, is already pushing this roll-out with more than a third of properties meeting this criteria. It adds that the offerings “…are far from generic” but “thoughtful, globally inspired dishes”. 


The chain has teamed up with environmental and wildlife champion WWF France for its second major initiative. Its Sustainable Seafood Principles will see the chain remove 350 endangered seafood species from its menus by 2027.


The hotel chain has also announced its intention to interrogate its fish-sourcing protocols. Any fish that is caught in the wild will now have to have a MSC-certification or be locally/ responsibly sourced. The hotel chain will also use farmed seafood but the news report adds that the fish will need to be organic or have an Aquaculture Stewardship Council (ASC) certification.

Novotel’s global brand president, Jean-Yves Minet, said the business partnership with WWF will have a huge impact.  He said: “Through their guidance and expertise, we can drive change at scale across our 600 hotels and more widely across the industry and communities we reach.”
